Black Currant Popsicles (Printable)

Tangy, refreshing black currant popsicles bursting with bold fruit flavor. Perfectly sweetened frozen treat made with just three simple ingredients.

# What You'll Need:

→ Fruit Base

01 - 2 cups blackcurrant juice, unsweetened, fresh or bottled
02 - 1/2 cup granulated sugar
03 - 2 tablespoons fresh lemon juice

→ Optional

04 - 1/4 cup whole blackcurrants, fresh or frozen

# Directions:

01 - Combine blackcurrant juice and sugar in a small saucepan. Warm gently over medium heat, stirring constantly until sugar completely dissolves, approximately 3 to 5 minutes. Do not allow mixture to boil.
02 - Remove saucepan from heat and stir in fresh lemon juice. Allow mixture to cool to room temperature.
03 - If using whole blackcurrants, divide evenly among popsicle molds for added texture.
04 - Pour cooled blackcurrant mixture into popsicle molds, leaving approximately 1/4 inch space at the top for expansion during freezing.
05 - Insert popsicle sticks into each mold. Freeze for minimum 4 hours or until completely set.
06 - Run the exterior of popsicle molds under warm water for several seconds, then gently pull popsicles from molds.

# Expert Advice:

01 -
  • They taste like summer in your hand—tart, refreshing, and nothing like the artificial stuff.
  • Making them feels almost too easy, like you're getting away with something delicious.
  • Naturally vegan and gluten-free without any weird substitutions or compromises.
02 -
  • Don't skip letting the mixture cool completely; pouring hot liquid into molds can warp them and create uneven freezing.
  • The space at the top of the mold matters more than you think—a too-full mold will push the popsicle up and crack it as it freezes.
03 -
  • Stick your popsicle molds in the freezer for 10 minutes before filling them—this helps the mixture set faster and more evenly.
  • If you can't find fresh blackcurrants, frozen ones work just as well and are usually cheaper, especially off-season.
