# Directions:

01 - In a large bowl, whisk together all-purpose flour, almond flour, granulated sugar, and salt.
02 - Add cold cubed butter and use a pastry cutter or fingertips to blend into the flour until mixture resembles coarse crumbs.
03 - In a small bowl, whisk egg yolk with 3 tablespoons ice water; drizzle over flour mixture and stir just until dough comes together, adding extra water if needed. Shape into disk, wrap, and chill at least 30 minutes.
04 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
05 - In a bowl, toss plum slices with clover honey, turbinado sugar, cornstarch, vanilla extract, cinnamon, and a pinch of salt until evenly coated.
06 - Roll chilled dough on a lightly floured surface into a 12-inch circle; transfer to prepared baking sheet.
07 - Arrange plum mixture in center of dough, leaving a 2-inch border; gently fold edges over fruit, creating pleats.
