There’s something wonderfully rustic about making a galette that reminds me of sunny afternoons spent in my grandmother's kitchen. The sweet smell of roasting tomatoes fills the air, mingling with the buttery notes of pastry as it bakes, creating the kind of warmth that makes you pause and savor the moment. The very first time I prepared this dish, I felt like I'd stumbled upon a secret—simple ingredients transformed into something extraordinary. Friends gathered around the table, their laughter rising above the sound of crust cracking, each bite a delightful discovery. It's one of those dishes that invites conversation and connection, whether you’re sharing it with family or friends.

One rainy evening, I decided to surprise my best friend with this galette for dinner. As I pulled it out of the oven, the warm aroma enveloped us, and we quickly fell into stories from our travels, all while the tart cooled on the counter. I’ll never forget the look on her face as she took her first bite—it was pure joy, a moment where food transcended mere nourishment.

Ingredients

  • Pastry: A vital base, this flaky pastry is the backbone of the galette, and keeping the butter cold ensures that perfect texture.
  • Cherry Tomatoes: These little bursts of sweetness provide moisture and brightness to each slice.
  • Feta Cheese: Creamy and tangy, feta adds a rich depth that pairs beautifully with the roasted tomatoes.
  • Herbs: Oregano or thyme introduces an aromatic note that elevates the flavor profile.
  • Olive Oil: Enhancing the tomatoes and adding richness, good quality olive oil can change the game.

What You'll Need

Pastry

01 1 1/4 cups 160 g all-purpose flour
02 1/2 tsp fine sea salt
03 1/2 cup 115 g cold unsalted butter, cubed
04 1/4 cup 60 ml ice water, plus more if needed

Filling

01 2 cups 300 g cherry tomatoes, halved
02 3 tbsp olive oil
03 1/2 tsp sea salt
04 1/4 tsp freshly ground black pepper
05 1 tsp dried oregano or thyme
06 5 oz 140 g feta cheese, crumbled
07 1 clove garlic, minced
08 1 tbsp fresh basil, chopped plus extra for garnish

Finish

01 1 egg, beaten for egg wash
02 Freshly ground black pepper, to taste

Directions

Step 01

Prepare Pastry Dough: In a large bowl, combine flour and salt for the pastry. Add cold butter and work it in with your fingertips or a pastry cutter until mixture resembles coarse crumbs. Add ice water gradually, mixing until dough just comes together. Shape into a disk, wrap in plastic, and chill for 20 minutes.

Step 02

Preheat Oven: While dough chills, preheat the oven to 400°F 200°C. Line a baking sheet with parchment paper.

Step 03

Prepare Filling: In a bowl, toss cherry tomatoes with olive oil, salt, pepper, oregano or thyme, and minced garlic.

Step 04

Roll Out Pastry: On a floured surface, roll out the chilled pastry to a rough 12-inch 30 cm circle. Transfer to the prepared baking sheet.

Step 05

Assemble Galette: Sprinkle half the feta over the center of the dough, leaving a 2-inch 5 cm border. Top with cherry tomato mixture and sprinkle with remaining feta and chopped basil.

Step 06

Fold Edges and Apply Egg Wash: Fold the pastry edges up and over the filling, pleating as you go to form a rustic edge the center will be exposed. Brush pastry with beaten egg.

Step 07

Bake: Bake for 35–40 minutes until golden brown and tomatoes are roasted. Let cool for a few minutes.

Step 08

Garnish and Serve: Garnish with more fresh basil and freshly ground black pepper. Slice and serve warm or at room temperature.
