This recipe has become a holiday favorite in my family, bringing a burst of color and flavor to our winter gatherings.
Ingredients
- For the Snowflake Tortilla Chips: 4 large flour tortillas 2 tbsp olive oil 1/2 tsp sea salt
- For the Salsa: 3 medium ripe tomatoes, diced 1/2 small red onion, finely chopped 1 small jalapeño, seeded and minced 1/4 cup fresh cilantro, chopped Juice of 1 lime 1/2 tsp salt 1/4 tsp black pepper
- For the Winter Salad: 4 cups mixed winter greens (e.g., kale, baby spinach, arugula) 1/2 cup thinly sliced radishes 1/2 cup pomegranate seeds 1/3 cup crumbled feta cheese 1/4 cup toasted pecans or walnuts, roughly chopped
- For the Dressing: 2 tbsp olive oil 2 tsp white wine vinegar 1 tsp honey Salt and pepper to taste
Instructions
- Step 1:
- Preheat the oven to 375°F (190°C).
- Step 2:
- Using snowflake-shaped cookie cutters, cut out shapes from the flour tortillas. Brush both sides with olive oil and sprinkle with sea salt.
- Step 3:
- Arrange the tortilla snowflakes on a baking sheet in a single layer. Bake for 8 10 minutes, flipping halfway, until golden and crisp. Let cool.
- Step 4:
- In a medium bowl, combine diced tomatoes, red onion, jalapeño, cilantro, lime juice, salt, and black pepper. Stir well and set aside for flavors to meld.
- Step 5:
- In a large bowl, gently toss winter greens, sliced radishes, pomegranate seeds, feta cheese, and toasted nuts.
- Step 6:
- Whisk together olive oil, white wine vinegar, honey, salt, and pepper. Drizzle over salad and toss to coat.
- Step 7:
- Divide salad among plates. Arrange snowflake tortilla chips on top or on the side. Serve with a generous spoonful of salsa.
